A Plague Tale: Innocence is a straight forward game and you can get all the achievements in one playthrough. You will have to look for resources to upgrade your sling and equipment to the max though. If you miss something or you’re lacking resources you can use chapter select to replay a chapter but all next chapters will get deleted.
